Mark Camalleri
Born in Buffalo, and a graduate of the prestigious Culinary Institute of America, Chef Mark worked in Manhattan at the Top of the Sixes in the 1980's. Throughout his 30 plus years in the restaurant and hospitality industry, he also worked at some of Buffalo’s most reputable and well- liked restaurants: Mulligans Night Club, the Stuffed Mushroom, Oliver's, Shayleen’s, City Grill, Bacchus, and now, the 31 Club.

Mark enjoys sharing his culinary knowledge not only with his fellow colleagues, but has also taught several cooking classes and performed numerous demonstrations at places such as Williams Sonoma, the Tops Cooking School, and the Premier group.
